I wanted to offer the wines I knew and loved
A restaurateur by training, what has always motivated Gildas is the welcome and contact with customers. After studying in the dining room, he travelled to perfect his oenological knowledge and see the country. USA, Canada, New Zealand, Australia... As many countries as there are experiences. He discovered the wine bars of Montreal, and that was the trigger. Back to Nantes and creation of his first restaurant Plan B in 2011, then 5 years later opening of his second restaurant in 2016: Les Brassés for another 5 years. He has always been in contact with wine and cheese. He has this culture of the hotel and restaurant industry, this culture of sharing, this culture of transmission.
